Salty Sweet Potatoes 2 large sweet potatoes, diced small, 1/2 cup olive oil, 1 lb salted cod, soaked overnight in cold water, 2 boiled eggs, chopped fine, 3 Tbsp. chopped red onion, 4 Tbsp. chopped chives Boil the sweet potatoes until tender but firm and hold at room temperature. Pull the cod to break it into small pieces and place them over the potatoes. Dress with olive oil and sprinkle with chopped onions, egg and plenty of chives. 4 servings |
