2 large very green plantains, Oil for frying, Salt.
How To Prepare:
Peel the green plantains and slice them in one inch pieces, and keep in cold water. Heat the oil to 350�F. Drop the soaked pieces of plantain carefully in the hot oil and fry until golden brown. Remove from the oil and flatten with the aid of the bottom of a cap or pan. Once flat, fry once more until very cripsy. Salt them and serve as a complement or an hors d'oeuvre topped with Conch Salad.
