Beef "Bistec" with Smothered Onions

24 oz. beef tenderloin center cut, 1 large onion, sliced thin, 3 Tbsp. unsalted butter, 2 Tbsp. white vinegar, 1 Tbsp. powdered cumin, 1 Tbsp. garlic powder, Salt and pepper

How To Prepare:


Take half inch slices of the tenderloin and pound until thin, in the style of scallopini.

Mix cumin and garlic powder, and sprinkle on pounded beef, along with salt.

In a skillet, heat the butter and wilt onions until translucent. Place the pounded, seasoned beef over the smothered onions, and continue cooking until the meat is done. Add the vinegar and cook for an additional minute.

Serve beef slices with smothered onions over them. Traditionally served with white rice and red beans.
